NEW! PINEAPPLE-COCONUT SCONES

This recipe was born out of necessity. When I do my markets I have my three main-stay flavors; orange-pecan, lemon-blueberry and lime-cardamom. The fourth flavor is always in rotation like strawberry-almond and pistachio-rose. A couple weeks ago before a market I ran out of strawberries so I looked to the cupboard for inspiration and found a can of pineapple chunks. That's right a CAN. I happened to have shredded coconut as well. Presto!! The Pineapple-Coconut scone is born. Filled with chunks of pineapple, dried pineapple, sliced almonds and coconut these scones are very moist and the pineapple icing and toasted coconut add just the right amount of sweetness to every bite.

PISTACHIO-ROSE SCONES

One of India's most popular desserts is Kulfi, a mixture of sweetened, condensed milk and cream which is frozen and commonly flavored with cardamom and a little rose water. Dense, creamy and delicious. And not overly sweet. Pistachio-Rose scones are deliciously exotic made with the same Kulfi spices, almonds and golden raisins veiled in a rose-water glaze and sprinkled with toasted pistachios. Best of all they won't melt!

Another favorite flavor are these delectable strawberry-almond scones. Moist and delicious, they're laced with a light strawberry icing sprinkled with toasted almonds. Who needs strawberry jam when they're already loaded with them?

LEMON-BLUEBERRY SCONES

Lemon and blueberry sittin' in a tree...well, you know the rest. They are just meant to be together. And enclosed inside a moist scone they live happily ever after. They are so pretty, too. Little specs of lemon zest against deep purple marbled throughout. And of course they taste as good as they look! Iced with a light lemony glaze.

LIME-CARDAMOM SCONES

Pucker up! These scones have a bright, sparkling burst of citrus flavor in every bite. The tropical flavors of fresh lime zest and cardamom are a perfect match. While not exactly tropical, dried cranberries add that little sweet bite and the lemon-lime glaze ties everything together. These would be absolutely perfect with a hot cup of chai!

ORANGE-PECAN SCONES

Can you say "moist?" I sure can! You can also say delicious. These scones are an adaptation of my mother's recipe. There have been some changes but one thing remains the same. Orange segments. Yes, actual chunks of orange are studded throughout these bad boys. Banded together with chunks of dried fruit and toasted pecans they are a party on a plate. Topped with an orange glaze these scones are definitely on the sweet side so no need to use jam or jelly. That would just be showing off.
