Pineapple Jam
Hand picked local wild blackberries. I'm sorry, but they are far superior in flavor than what you'll find at the farmer's markets. They may be small but they're sweet and full of deep blackberry flavor. Lime was the perfect choice for a little zest. Blackberry season is nearly over so be sure to pick up a jar at either market this Fall before they're all gone!
Ingredients: wild blackberries, pectin, lime zest, lime juice and sugar.
Pineapple Jam
This jam was inspired by my recipe for pineapple upside-down cake. Aside from the pineapple, there's two key ingredients that make this jam special - cardamom and lime zest. It gives it an amazing tropical flavor. Spread it on my Lime-Cardamom Scones for an over-the-tropical treat!Ingredients: pineapple, pectin, cardamom, lime zest, lime juice and sugar.
When I first heard of this jelly I thought "What? That....sounds...cool!" I first heard of it when a member in my Facebook group, Foodcentrics, posted a link to a recipe on another Blogger site called Fat of the Land. I loved the concept that one could just scamper about picking dandelion blossoms and make something delectable. Well, that's just what I did. I scampered. It was described as tasting like "jellified honey". And that's just what it's like only without that harsh sensation at the back of the throat that honey sometimes produces. Sort of reminds me of chamomile, too. It's wonderful! Dandelion petals boast antioxidant properties, too. Orange Marmalade
I wrote a post about my marmalade experience which discusses my hatred of marmalade, to my understanding of marmalade, to my becoming a devout marmalade born-again. And I invite all of you haters out there to try it. Ingredients: oranges, orange peel, lemon juice and sugar.

Mixed Citrus Marmalade
This is made in the exact same way orange marmalade is made only with a mixture of grapefruit, mandarins and limes. This marmalade has a complex citrus flavor. It has a little more "bite" than the orange but by no means über bitter. It's lovely on toast but I'm sure you can play around with it in the kitchen. Maybe use it in a glaze for duck or lamb.
